🛒 Ingredients:
1 cup fresh moringa leaves (washed and stems removed)
1 medium onion (finely chopped)
2 medium tomatoes (chopped)
2–3 garlic cloves (minced)
1 tsp ginger (grated)
2 green chillies (slit or chopped – optional)
½ tsp mustard seeds
½ tsp cumin seeds
¼ tsp turmeric powder
½ tsp red chilli powder
1 tsp coriander powder
Salt to taste
2 tbsp cooking oil
1 cup water or light coconut milk (for gravy)
Fresh coriander (for garnish)
👨🍳 Instructions:
Prepare the Moringa Leaves:
Pluck the leaves from the stems and rinse thoroughly 2–3 times to remove any grit.
Let them drain in a colander.
Sauté the Aromatics:
Heat oil in a pan over medium heat.
Add mustard seeds and let them pop. Then add cumin seeds.
Add chopped onions and sauté until golden brown.
Stir in garlic, ginger, and green chillies. Cook for a minute.
Add Spices and Tomatoes:
Add turmeric, red chilli, and coriander powder. Mix well.
Add chopped tomatoes and cook until soft and oil starts to separate.
Add Moringa Leaves:
Add the moringa leaves and sauté for 2–3 minutes until they wilt slightly.
Simmer the Curry:
Add 1 cup water or coconut milk and bring to a gentle boil.
Reduce heat and simmer for 10–15 minutes until the leaves are tender.
Season and Serve:
Add salt to taste.
Garnish with chopped coriander before serving.
