Simple Moringa Leaves Curry Recipe

🛒 Ingredients:

  • 1 cup fresh moringa leaves (washed and stems removed)

  • 1 medium onion (finely chopped)

  • 2 medium tomatoes (chopped)

  • 2–3 garlic cloves (minced)

  • 1 tsp ginger (grated)

  • 2 green chillies (slit or chopped – optional)

  • ½ tsp mustard seeds

  • ½ tsp cumin seeds

  • ¼ tsp turmeric powder

  • ½ tsp red chilli powder

  • 1 tsp coriander powder

  • Salt to taste

  • 2 tbsp cooking oil

  • 1 cup water or light coconut milk (for gravy)

  • Fresh coriander (for garnish)


👨‍🍳 Instructions:

 

  1. Prepare the Moringa Leaves:

    • Pluck the leaves from the stems and rinse thoroughly 2–3 times to remove any grit.

    • Let them drain in a colander.

  2. Sauté the Aromatics:

    • Heat oil in a pan over medium heat.

    • Add mustard seeds and let them pop. Then add cumin seeds.

    • Add chopped onions and sauté until golden brown.

    • Stir in garlic, ginger, and green chillies. Cook for a minute.

  3. Add Spices and Tomatoes:

    • Add turmeric, red chilli, and coriander powder. Mix well.

    • Add chopped tomatoes and cook until soft and oil starts to separate.

  4. Add Moringa Leaves:

    • Add the moringa leaves and sauté for 2–3 minutes until they wilt slightly.

  5. Simmer the Curry:

    • Add 1 cup water or coconut milk and bring to a gentle boil.

    • Reduce heat and simmer for 10–15 minutes until the leaves are tender.

  6. Season and Serve:

    • Add salt to taste.

    • Garnish with chopped coriander before serving.
